In this blog we would like to introduce a new kind tea cake compressed in the shape of waffles.
Easy to Break Waffle Shape
What’s unique about this shape isn’t just that it looks cool, it also has a practical purpose. It can be conveniently broken into square pieces. To further improve the experience, we’ve ordered the tea factory to not use 200 gram of tea but lower it to 150 grams only to make the cake thinner and therefore easier to break. Say bye to tea knives!
Bai Mu Dan Tea Leaves
The cake consists of bai mu dan grade tea leaves. Bai Mu Dan is a white tea that consist of young leaves blended with Silver Needle white tea buds. This mix of leaves and downy buds, allows the tea have a wonderful color contrast.
Drink it Fresh or Let it Age
The taste of the tea is still very light and floral as the tea is considered very young for a age white tea cake. If you love fresh white tea, then you can enjoy it right now. Keep in mind that you need to increase the steeping time relative to what you're normally used to, because the leaves need time to loosen up. Use about 60 seconds for the first brew. Or 3 minutes if you brew it in a large teapot.
For a stronger white tea with fruity or medicinal notes, we recommend to store this tea for a couple years before consumption. The colour of the tea will slowly evolve from yellow to orange, and eventually to maroon, in a course of about 7 years. The speed of aging will, however, depend on the storage conditions (temperature and humidity). If you want to enjoy this tea both fresh and aged, then we recommend to order two cakes!
